Job Description

  • Able to effectively control the Food & Beverage Cost and Control the Food and Beverage outlets in terms of wastage, pilferage and efficiency.

  • Prepare variance analysis for food & beverage and communicating with relevant parties and Update and maintain receipts into the systems (FMC).

  • Check and verify any happy hours discounts, all complimentary sales in POS systems, all staff meals and staff discounts, all Package meals, all settlements done on the POS system, all sales have been transferred correctly to the Property Management systems (PMS).

  • Check the cost of sales in all F&B outlets and ensure that the costs are within budget.

  • Check the menu pricing on the POS systems and ensure the correct prices are loaded ad Check the restaurant and bar checks on daily.

  • Check the complimentary and confirm that all are approved and Daily Import of Micros Sales to Materials Control system are taken

  • Continuously study weaknesses in F&B control implemented at the Hotel and provide suggestions for improvements.

  • Responsible for monthly F&B Report and distribute to management and surprise spot checks at all F&B outlets.

  • Spot check on the receiving department to ensure that the scales are correct and goods are checked for quality.

  • Check and ensure that no material is issued out from the store without requisition or approval from the respective department head.

  • Coordinate with restaurant management and finance to sort out issues pertaining to F&B.

  • Update selling prices in POS as per the instruction from authorized persons.

  • Responsible to maintain the Menu Pricing, Consumption and POS systems.

  • Any other tasks as and when required by the management.

Job Requirements

  • Minimum B.A/B.Sc Degree in Accounting, Finance or any other related fields of study

  • Minimum of Five Years' experience in Food & Beverage cost controlling 

  • Ability to analyze large volume of complex financial information from many sources and create reports, forecasts, and projections

  • Strong problem-solving skills, including ability to effectively address any issue in collaboration with others as appropriate

  • ability to proactively identify and prevent potential problems

  • Ability to help develop problem solving skills among direct reports and other team members as appropriate,

  • Ability to take initiative to identify, prioritize and implement all elements required for team to fulfill responsibilities,

  • Detail oriented and organized

  • Ability to develop presentations and effectively present to all levels of company, hotels & owners.

  • Strong communication and negotiation skills (all levels of management and external customers)

  • Proficient in MS Excel, Word and Outlook with the ability to quickly learn new programs when required
