Job Description

Roles

  •  Develop an operating budget for the new restaurant and review the budgets of the existing ones

  • Monitor and take corrective action as necessary to ensure that budget goals are attained

  • Monitor the proper accounting and reconciliation of the POS systems and ensure suitable standard operating procedures (SOPs) are in place for efficiency and traceability 

  • Schedule regular management meetings with heads of department (HODs) to clarify the business goals of the Food & Beverage division and ensure the appropriate strategies are in place to achieve them

  • Schedule regular critical path meetings with HODs to ensure the new branch opening is on track 

  • Develop a suitable manning plan for the new branch and oversee the hiring and effective onboarding of new staff members by the HR department 

  • Implement effective training programs for new staff and existing staff

  • Create and implement a professional development program for existing managers, supervisors and potential leaders in the department 

  • Create and implement a 360-degree feedback process for managers and supervisors  

  • Oversee training in HACCP and ensure strict protocols are in place for hygiene and food safety, sanitation, energy management, preventive maintenance

  • Implement practical and actionable SOPs for new restaurant operations and later adapt those SOPs for the existing restaurants, including:

    • Training and development 

    • Brand, product and service approach and standards

    • Checklists, stock lists and inventory control 

    • Production and logistics

    • Finance, purchasing and ordering 

  • Supervise the new branch Head Chef and Head of Beverage to ensure the F&B development is in line with the vision of the leadership team 

  • Regularly review the quality of menu items and products across group restaurants and plan necessary menu engineering activities 

  • Manage cost controllers and develop and implement SOPs for revenue and cost control 

  • Monitor purchasing and receiving procedures for products and supplies to ensure proper quantity, quality and price for all purchases

  • Supervise the Marketing Manager and help plan and approve external and internal marketing and sales promotional activities for the group restaurants

Job requirements

  •  Bachelor’s degree in Business Administration, Tourist/Hospitality Management, or equivalent relevance to job functions.

  • Candidates must have at least 5 years' experience in the hospitality industry, with an emphasis on food and beverages. Preferred restaurant outlet experience in 4* and above rated hotels

  • To be successful as a F&B manager, you should have necessary knowledge and skills in the following:

  • Ability to connect with customers

  • In-depth knowledge of the food industry
