Job Description

The Food and Beverage Manager is responsible for overseeing all aspects of the hotel’s food and beverage operations, including restaurants, bars, banquets, room service, and catering. This role ensures the highest standards of quality, service, and profitability while maintaining compliance with health and safety regulations. The F&B Manager collaborates closely with the Executive Chef, Restaurant Managers, and other department heads to deliver exceptional guest experiences and optimize financial performance.

Duties & Responsibilities:

Operational Management

  • Oversee daily operations of all F&B outlets, including restaurants, lounges, banquets, catering, and room service.

  • Ensure smooth coordination between kitchen, service, and bar teams.

  • Maintain high service standards in line with brand and hotel policies.

Financial & Budget Management

  • Develop and manage budgets, forecasts, and financial reports for F&B operations.

  • Monitor food, beverage, and labor costs, implementing cost-control measures.

  • Maximize profitability through upselling, promotions, and efficient resource management.

Guest Experience & Service Quality

  • Ensure excellent guest service, handling complaints and feedback professionally.

  • Regularly review service delivery, menus, and guest satisfaction scores.

  • Implement guest-centric initiatives to enhance dining experiences.

Team Leadership & Development

  • Recruit, train, and develop F&B staff to maintain high performance and morale.

  • Create schedules, assign duties, and oversee staff performance.

  • Provide coaching, mentoring, and performance evaluations.

Menu & Product Development

  • Collaborate with the Executive Chef and beverage team on menu planning, pricing, and promotions.

  • Monitor food quality, portion control, and presentation standards.

  • Introduce innovative dining concepts and seasonal offers.

Compliance & Safety

  • Ensure compliance with health, hygiene, and safety standards (HACCP or equivalent).

  • Maintain liquor licensing, food safety, and sanitation standards.

  • Conduct regular inspections and audits of outlets.

Sales & Marketing Support

  • Work with the Sales & Marketing team on promotions, events, and campaigns.

  • Support banquet and catering sales to attract new business.

  • Build relationships with suppliers, partners, and corporate clients.

Reporting & Analysis

  • Track KPIs such as revenue per cover, guest satisfaction, food cost %, and labor cost %.

  • Provide regular performance reports to General Manager.

  • Identify opportunities for operational improvements.

Job Requirements

Skills & Qualifications

  • Bachelor’s degree/diploma in Hospitality Management or related field.

  • 5+ years of F&B management experience (preferably in hotels/resorts).

  • Strong leadership, communication, and organizational skills.

  • Knowledge of food trends, mixology, and menu engineering.

  • Proficiency in F&B software (POS, inventory management, etc.).

  • Ability to work under pressure in a fast-paced environment.
