Job Description

Brewing master is responsible to lead a production staff capable of meeting/exceeding the goals of the brewery by organizing and overseeing the brewing system. He/she must ensure the smooth running of all production lines. He/She must report to the production and quality manager and work closely with him/her to ensure and maintain efficient and productive operation system that meets all requirements.
Lead a brewing/production staff and meeting/exceeding the goals of the brewery
Operate brewing equipment in a safe and efficient manner.
Complete all necessary records accurately and on time and record all irregularities in the logbook.
Take respective samples as per the brewer’s instruction.
Handling of all waste as per Brewer’s instructions.
Perform all tasks in an efficient, safe, and productive manner.
Use and keep all PPE clean and available when is necessary.
Work closely with the Brew-master to generate daily production schedules and ensure that they are met.
Maintain integrity of the main brewery and ensure there is no cross-contamination between it and the on-site wild fermentation facility
Interact routinely with the Brewing and quality manager to ensure production schedules meet customers’ needs while balancing the age of full goods inventory and minimizing stock out situations
Develop and maintain Standard Operating Procedures (SOPs) for all aspects of production: brewing, cellaring, wood-aging, packaging, maintenance and QA/QC.
Develop performance and productivity metrics for all production areas and hold team members accountable for achieving these goals.
Develop and maintain proper yeast management practices to ensure consistent fermentations that meet quality standards and keep pace with desired production goals.
Own production sustainability goals and seek out innovative solutions to not only ensure achievement but continually enhance brewery performance.
Oversee sanitation and upkeep of all production facilities including the main brewery, fermentation cellar, and packaging areas.
Planning and organizing production schedule
Look to incorporate elements of lean production principles as appropriate
Develop and maintain relationships with suppliers at all levels to meet company goals
Develop and maintain a preventative maintenance program for all equipment to maximize overall production efficiency
Perform all CI P’s, as per work instructions of the Brewer.
Maintain inventory as needed. Report all low levels of inventory to your supervisor when necessary.
Monitor gravities, temperatures, DO, and carbonations daily.
Communicate regularly and efficiently with his peers to have a proper shift handover.
Assist other departments when necessary, including but not limited to brewing, bottling, and QA/QC.
MA/MSC/BA/BSC in Brewery or related fields
6 years of working experience
Having a mindset of achieving excellence
Management level experience in a production brewery or food production facility with firsthand experience in developing new processes and managing culture
A strong understanding of brewing process controls
Familiar with brewery management software programs
Extensive knowledge of food/brewing industry compliance standards
A strong work ethic and hands-on approach
Ideally familiarity with the operation and maintenance of the following: steam boiler, centrifuge, fork truck, roller mill, brew-house, cellar, centrifugal pumps and various process controls.
